After Christianity was replaced the Roman pantheon as the official religion,many of the citizens were still celebrating pagan festivals. One of the most prominent roman god then was Mithras, whose birthday fell on 25th December.
However, the Church could not just simply stop everyone to stop their celebrations (on account that it was already winter and people needed an excuse to be happy, to shake off the dullness of the season)
Hence, they came up with an excuse of Christ's birthday, although he was likely to be born in the season of spring (ard March?). There's many similarities between the cult of Mithras and Christianity, just look it up in wikipedia.

As for Santa Claus, he was derived from St Nick, who was born from a wealthy family, but gave away much of his inheritance to the poor. He was also the patron Saint for the sailors and travelling merchants, on account of his family background. I think he was one of hte few saints, who were not martyred for his beliefs at that time.
Nevertheless, it was also said that the pagan Father Christmas ( who supposedly delievered coal? to the kind people who unknowningly welcomed him into their homes) had also merged with St Nick, so that Santa Claus sends presents to the good children. Father Christmas was often portrayed as a fat old man with a heavy beard, which could be the basis of Santa's current incarnation

The sun starts going northward at this date. three days after the Winter Solstice, Dec. 21 or 22, on or around Christmas. three days is how many days the sun won't go either south or north. It's based on a Roman Pagan holiday of gift giving and family gatherings, I belive it's Saturnlia or something like that.

the 25th was chosen by the monks who put together the cristen callendar to coenside with a pagen holiday. wich is were most of your dates come from and the reason they were chosen.
the birth of Christ was not in December that is a Bible fact the date was simple chosen to go up against a pagen holiday.
