The hardest modern language to learn to speak correctly, is supposed to be English. Which is why those who speak English as a first language have such a hard time learning other languages.
Hardest to read and write is between the Chinese Languages and Japanese, with all the characters you have to learn.

Finnish and Hungarian are considered the most difficult Western languages. English is also quite difficult.
For Western language speakers, both Latin based (Spanish, Italian, French, for example) or Germanic based (German and English) Asian tonal languages are difficult. English is syllable stress and intonation changes, not rising and falling tones in a single syllable.
Japanese is not so hard, easy to speak. Chinese, Thai, Khmer and Lao are all tonal and are difficult.

If a person seeks to genuinely learn a new language, it will be easier, as the will and determination is there. There is difficulty in all languages it all depends on the attitude of the person and the environment within which he/she is learning the language. Once you start learning, it is truly a wonderful experience.

I would say Arabic. Its bloody difficult, it has its own alphabet, and you read it from right to left instead of left to right, the grammar is so complex with all the gender distinction and the rules are complicated. Depends on many things. The second must be Chinese.

Chinese because they use ideographs instead of an alphabet...and also they use tones that changes the meaning of a word. For instance, the phrase "ma" can have four completely different meanings depending on what tone you use when you say it.
Easiest language? Esperanto :-)

I suppose it depends on the person looking to speak a language. What's difficult for one person just comes naturally to another.

Although I can only speak English, I would imagine Celtic (Gaelic) to be extremely hard to learn and pronounce.
