The movie have way of intacting with CGI which is were the the can remove any part of the body without actually replacing it with super makeup. CGI is Computer Generated Images, the legs are still there but have been removed by a special computer program. It is the same when real actors interact with animated cartoons...first the actors do their part in front of a blue or green screen and then the special CGI effects take over.

Like a few others have said, blue screen, the same magic that lets youur local weatherman stand in front of the huge map. They simply use a camera that doesnt pick up the color blue.
For a cute demo, watch the beginning of Groundhog Day

It's hard to explain but they show you all of the magic on the Forrest Gump special edition DVD. Basically blue screen and computer magic. Watched it last night and it still looks amazing

It's amazing the lengths that a good actor will go to to get into the part - I'm so impressed that anyone would consider bilateral amputation but I think he did OK because I've seen him walking since & he looks as if he had them reattached.

CGI and blue screen.
The actor clearly still has legs, I mean he walks round New York in CSI every week now.
