People with Obsessive Compulsive Disorder have the urge to do certain things or else they can fell very uneasy or have an anxiety attack, or many other symptoms. In Monk's case, his compulsion (among many others) are to count/tap lamp posts. Many people suffering from OCD believe that if they don't perform their rituals, something bad will happen, and Monk have been doing said rituals since Trudy died. In my opinion, he thinks that if he does stop acting out his compulsions, he thinks that another person close to him will die, or leave him, or something of the sort.

one guy or woman who had to have a separate dish for each form of nutrition . On an entire many of the extreme compulsive human beings i've got met in uncomplicated terms have one or 2 issues that they over bask in.

It's just one of his compulsions. I don't believe it's ever explained in the show.
