there's a sandwich I had in Maine I'm trying to make at home

Well, that depends on where you got it from - different restaurants have different versions of italian sandwiches (basically anything with traditionally italian ingredients). You can try mixing and matching things like salami, pastrami, mortadella (italian bologna), giardinara, pepperoncini, pancetta (italian bacon), olives, prosciutto (italian ham), provolone or fresh mozzarella, roasted peppers, onions, fresh basil leaves, tomatoes, lettuce (NOT iceberg, if you can help it) and either your favorite vinaigrette or a drizzle of good olive oil and balsamic vinegar. Something I like to do is make my sandwich a couple hours ahead and wrap it in plastic wrap so the dressing has a chance to soak into the bread a little.
You can also try grilled chicken or spicy sausage with your favorite marinara, grilled peppers and onions and melted mozzarella for a hot sandwich. Make sure you get good, fresh, crusty bread from your local baker or even the counter at your local grocery store.

I get a ton of requests for this sandwich, particularly at Superbowl time. I think the key is the fresh ingredients and using a really good italian dressing (or a homemade vinagrette).

1/8 lb sweet capicola
1/8 lb mortadella
1/8 lb genoa salami
1/8 lb ham
fresh basil leaves
fresh mozzarella cheese, cut into 1/4 inch slices
1/2 roasted red pepper, cut into strips

Superbowl Sandwiches
Slice the loaf of bread in half lengthwise.
Dig out excess bread in the center so that each half resembles a shallow"canoe".
Drizzle the bread with italian salad dressing.
Layer the ingredients on the bread as desired.
Cut the finished sandwich into 1 1/2 inch slices and enjoy!

1 head red leaf lettuce, rinsed and torn
2 medium fresh tomatoes, chopped
1 medium red onion, chopped
6 tablespoons olive oil
2 tablespoons white wine vinegar

2 cloves garlic, chopped
1 teaspoon dried basil
1/4 teaspoon red pepper flakes
1 pinch dried oregano
1/2 pound sliced Capacola sausage
1/2 pound thinly sliced Genoa salami
1/4 pound thinly sliced prosciutto
1/2 pound sliced provolone cheese
4 submarine rolls, split
1 cup dill pickle slices
DIRECTIONS
In a large bowl, toss together the lettuce, tomatoes and onion. In a separate bowl, whisk together the olive oil, white wine vinegar, parsley, garlic, basil, red pepper flakes and oregano. Pour over the salad, and toss to coat evenly. Refrigerate for about 1 hour.
Spread the submarine rolls open, and layer the Capacola, salami, prosciutto, and provolone cheese evenly on each roll. Top with some of the salad, and as many pickle slices as desired. Close the rolls and serve.

I am from (in) Maine. Here an italian sandwich is in a long sub roll. It has either ham or salami, provolone cheese, pickles, green pepper, onions, tomatoes, and sometimes black olives. Italian sandwiches here are served cold. They usually have salt and pepper on them and are drizzled with oil.

a traditional "Italian" sub, at least in the northeast, has:

mortadella (meat, looks like bologna with big white polka-dots)
salami (meat, looks like large pink version of pepperoni)
provolone cheese

usually comes on a long baguette / sub roll

usually has oil/vinigar for dressing, and salt, pepper, and oregano.

top it however you like: lettuce, tomato, onion, hot peppers....

OR the Italian word for sandwich is PANINO (singular, plural would be PANINI)... that could have anything, really, but usually cured meats and cheese

Pepperoni, Mortadella, Genoa Salami, hot peppers, tomatoes sliced thin, lettuce, oil and vinegar, salt and pepper on crusty roll.

Generally- provolone cheese, ham, salami, mortadella and capicolla. Sometime proscuito. . . top with pickles, onions, tomatoes, hot peppers, and some olive oil.

If you want an italian hot dog , it has to contain catsup,mustard,and french fries. be sure to use an italian roll and foot long franks. italian cheeseburger-catsup,mayonnaise,mustard,thick beef burger, cheese and alarge round hard roll. dont forget the french fries.
