Well, the idea that these were cartoons out to teach kids and entertain adults would be a nice, simple answer, but there is one other dimension:
Fred and Barney liked to eat a lot, expecially Fred.
Betty and Wilma liked to get expensive prezzies.
So, though it would be millions of years before they had a good reason to celebrate thanksgiving and Christmas, they decided to invent these special events.

How else are you going to try to get the Favorite Thanksgiving or Christmas message/story out to the children (or others) ... if you do NOT use the most popular Cartoon Character at that time!

It's just a cartoon, anything can happen if they want it to. Just like Fairly Odd Parents, just because there are no fairies doesn't mean the show can't be.
