Some of the junior colleges have nice programs as well. I think Collin County College (Spring Creek Campus) has been nationally recognized.

Dont forget to check KD Studio in Dallas, and if you choose to pursue a Bachelors, if you want to perform, it needs to be a BFA to get appropriate training. There are a couple of notable exceptions where a BA has worked for them, but BFA training is much more concentrated and is a safer bet.
