This is aimed at both sexes (but obviously I can learn more personally from the ladies):

If you could pick one novel that shows how a person could sweep somebody off their feet, which one would you recommend and what could I expect to learn?

"She Who Runs on the Waves" by Alexander Grin. He's most famous for "Chrimson Sails" but I think "Chrimson Sails" is too much like a fairytale. http://lib.ru/RUSSLIT/GRIN/parusa_engl.txt

"She Who Runs on the Waves" is a story about a guy who was chasing his dream, someone special (or something unusual?). Everything was almost working out, and stange and unusual things kept happening along the way. But in the end, it turned out the best things in life are actually quite simple and happiness is right next to you, knocking on your door, you just have to open it. I'm not sure if this is quite what you were looking for (swiping of the feet part) but this is my favorite love story. Sorry, can't find a link to it.

Teen Idol (by Meg Cabot) because it not only gives love advice throughout the book but it also shows how one random person can bring two other people together.
