You actually watch that junk. Though, for my money, the classics IT and all of the Nightmare on Elm Street Movies up to Freddy's Dead. The new stuff is all blood and gore and mostly rubbish.

The Haunting of Hill House. The original from the early 60's.
This movie is what fear is about. And you have it exactly reversed: recent movies understand the grotesque, the slash and the gore, but older movies didn't have that release and so had to rely on fear. The less you see the more frightening it becomes.
But I would also recommend the original Texas Chainsaw, which is less bloody than you would think, and has genuine moments of fright.
As well, a lovely little Canadian film which inspired all of the classic horror/slasher films of the later 70's, called Black Christmas. Again, the less you see, . . .

my sister said even SHE had to turn her head during saw 3 (and she's studying to be a csi) so i already know i don't need to even try to watch it.
hills have eyes was pretty gory and gross some what scary depends on the person i suppose.
i thought hostel was pretty twisted and gross not sure about scary other than the thought there really could be somewhere like that
emily rose wasn't bloody but definitely was the rest of the things you listed.
i can't think of any more off the top of my head it's hard to get all of those elements in a movie though.
