Nearly anything by George Thorogood. (i.e. Bad to the Bone, Six Days on the Road, Gear Jammer).
Dick Dale has some great riffs as well. A lot of people would probably answer Jimi Hendrix and Eric Clapton, but I'm sticking to my choice.

"Unchained" by Van Halen but he has some pretty cool arpeggios and double stops in "5150"/ BTW, Slash hates the intro riff of "Sweet Child O' Mine". He was just fooling around and Izzy Stradlin liked what he was playing and wrote some chords to go with it.

One of 'em is the guitar solo in Ozzy Osbourne's "Mr Crowley" - BUT! my favorite is the guitar work on Lucinda Williams "Righteously" - which has fabulous SFX.
