It can be any topic, as long as it's not controversial or offensive like choosing to be pro-choice. My teacher gave us an example, she wrote an essay on why her favorite place is the movie theater. I know this is an easy assignment, but the catch is I have to write in spanish, and read it aloud, so I don't want it to be complicated. I want an easy and simple thing to write about. I don't know Spanish, so maybe this won't work for you. How about your favorite meal? Why you like it, who you eat with, memories, etc (sight,smell that kind of thing).
