Cook a nice steak dinner, chill the red wine, have the candles ready, soft instrumental music, and pretty flowers as a centerpiece. Write him a letter and tell him how much you love him and how blessed you are to have had this past year with him.

If you can sing.... get a background track of a good romantic song and learn it.... then sing it for him as you dance together.
I did that to a jazzy song called "What Is the Color of Love?" many years ago.
