this kid i know was ditching school to go run off with his girlfriend everyday. then one day , because we were car-pooling, in the ditcher's mom's car, when we were driving down the street, and saw them together walking to the bus stop. his mom saw him, along with the rest of us in the car. So why does he still deny that he wasn't ditching?

It's just how some people react when they are in trouble. Sometimes criminals are caught red handed and they do the same thing. I think it's how some people deal with stress. They know they were caught but somewhere in their mind they cling to the thought that as long as they continue to deny it they are somehow still protecting themselves. They may have the illogical belief that if they admit to it, things may somehow get worse for them. Denial can be an automatic reaction when you don't want to accept something. It's ridiculous but people do it.

Do you know that he "ditched"? Or did you just see him walk to the bus stop? Maybe he just walked the girlfriend there and went back into the school. If his mother saw him why didn't she handle the situation right then and there?
