People already mentioned the Gods, but the cultural influence of the Greeks run deeper - it has been said the Romans were not a creative people. They were fierce warriors, and hard workers, but not (generally) deep or original thinkers.
Latin is derived from Ancient Greek - it uses declensions to indicate a noun's function in a sentenses and expresses verb tenses through prefixes and suffixes.
Roman art also takes its roots in ancient Greece - Roman statues, the theatre and painted frescoes were all common in Greece before the Romans adopted them.
Although gladiotorial combat and the practice of feeding the condemned to animals as a spectator sport was a Roman practice, the Olympic games already appeared in Greece and much of Greek athletics was practiced later by the Romans.
Philosophy is where Greece and Rome differ the most. Greek philosophers had a deep mystical penchant. Apart from natural philosophy, they also took great interest in metaphysics, including such rationalists as Aristotles and Plato. Roman philosophers, such as Marc Aurelius and Cicero tended to be more pragmatic and took an active interest in politics. However, much of the roots of their thinking can also be found in Aristotles.
Aristotles' politics was also an exploration of the political systems that existed in ancient Greece. Greek city states were diverses and experienced many forms of government including Republics, communism and democracy. Although the Roman assembly and its capacity to rule over vast lands and diverse people was truly original and revolutionized the Western world, much of the thinking behind its constitution can be found in Aristoteles. The idea of the rule of law is a Roman invention of important consequence to the world today.

Well,

After the Romans conquered Greece...

The Greek God Aries was adopted as the Roman God Mars.
The Greek Goddess Aphrodite was adopted as the Roman Goddess Venus.
The Greek hero Heracles was adopted as the Roman hero Hercules...

Basically the Romans adopted much of Greek mythology...

They also absorbed Greek philosophy such as the Socratic Method, math...

They emulated Greek architecture as well as sculpture...

Here are some sites.

The Roman Gods were complete rip-offs of the Greek Gods - Aphrodite to Venus being one example. Also, they improved upon their architecture and again, completely stole their art style.
