It depends on how many points you need. If you're likely to beat your opponent in scoring at other positions, Brady is the safe bet- he won't lay an egg, and will probably get a TD guaranteed.
Vick is a gamble, use him if you're gonna lose without a big day from your QB. He might go wild and throw 3 TDs and run for 2 more, or he might throw 3 interception and fumble twice. He's the ultimate risk/reward. He's just as likely to kill your scoring as give you a great day.
