He analyzes them with his ability, then he probably eats whatever part of the brain that gives them their powers, or all of it. They haven't really explained that yet.

he sees who things work that is his power. he needs to take the brains to find the power and absorb the power. he is crazy...

I assumed he ate them but maybe he absorbs them or something to get the ability from it....
