You have to have Turkey for Christmas - but also ham (Gammon) . When cooking your turkey cook it upside down - breast side down. Sounds daft and looks wierd but it keeps the juices around the breast and stops it drying out.
Then make your gravy from the juices of both meats and your veggies. Delicious. Any of the goodness "boiled out" of the veggies you're getting back in the gravy - and its so tasty.
Mmmm - so looking forward to my sunday roast now - as well as my Christmas dinner........

Mojo has a great cooking idea for turkey (I also roast chicken the same way). But I always think both turkey and gammon is the best. That way more people have something they really like, and still others eat BOTH! Also lots of leftovers to share round.
Of course it depends on what one can afford. In my family with three in uni or trade school, it actually takes a bit of saving to get the money to do a big festivity for friends and family, but it is well worth it!

i'm having sea urchin on a bed of sea slugs washed down with gallons of masai mara ox blood. hold on wait a minute, hah yep oh ok. i've just been told it an ethic christmas were having not an ethnic one. were having turkey slaughtered by vegans this year.
