so, is the new season of gundam seed going to be named eternity or something else?

Halt! Stop the presses!
There is no confirmed season 3 for Gundam Seed. "Eternity" or whatever name that supposed "3rd season" is purely fan made, meaning it is not true. This just proves that some fans can't wait to see what happens next.
But...
A Gundam Seed movie has been confirmed and it is in the works. It would be shown in 2007. Maybe, this is their answer to season 3. I'm so excited!
By the way, Stargazer is not a 3rd season. It is just an OVA.
