Try this one, it's won several science fairs. It's interactive and hard to believe, that makes it entertaining and amazing. It's a mathmatical odds fact.
Here's the basic facts. You have 3 things to choose from. A good idea would be to make little cut outs of brief cases like in "Deal or No Deal". Also, you will need an eraser board or a tablet for marking guesses. Don't mark the cases, but have one with 1,000,000 on the back and 2 with 0. Mix them and set them beside a 1, 2, and 3. Have someone choose one of them. Their chances are 1 out of 3 of being right. Show them if they were right or not and mark it on the board under "without switching". Have them do it again, then after they choose, remove one of the wrong ones out of the 2 they didn't pick and have them switch their guess to the other one. Mark if they are right or wrong under "with switching". Peolple will swear that the chances of being right are the same, but they are actually twice as good. The chance they were right the first time is 1 out of 3; the chance they are right after switching is 2 out of 3. Keep a running total, the results are guaranteed to be almost exactly twice as many in the switching column. Even if you are not going to be there this is something anyone looking at the display can do, as long as they have someone to look and remove one wrong one and won't cheat. You could do the trick with Mentos and Diet Coke. You may want to do it outside. If you don't know what I'm talking about, type "mentos and diet coke" in your search engine. The Mythbusters did a segment on it.

It seems that the mentos react with the diet coke and dropping three or four into a two liter diet coke will cause the coke to spew out and go everywhere. It is quite impressive. You will see several things on the web if you have not already seen this. It is messy, you may want to do it outside. But it is safe and it is fun.
