I didn't actually ask if remakes were a good idea. Thanks to everyone who has made a suggestion.

I suggest leaving classics alone. But if one has to answer the question, I would suggest the “Deep Throat” (1972)
Plot Summary:
Linda Lovelace, frustrated that her sex life leaves her unsatisfied, seeks medical help. The doctor informs her that the reason for her problem is that her clitoris is mistakenly located at the back of her throat - but there is a very simple remedy, which the doctor, and various other men, proceed to demonstrate...

I asked a similar question a week or two ago. I think the problem you've got here is that you asked which 'classic' film should be remade. Well, the answer to that is none! Why remake a classic? It's a classic for a reason, you could never recapture that special something the film had.
You could remake some films for the better though. I think something like Ghostbusters could be done brillantly now without all the cronky special effects. Imagine if someone like Peter Jackson got hold of it? Great stuff

Actually cuccorullo's answer was pretty good! Barefoot in the Park was a stage play by Neil Simon that was made into a film starring Robert Redford, Jane Fonda, Mildred Natwick and Charles Boyer. Barefoot in the Park is an interesting story with interesting characters but it was filmed like the play, which did not take advantage of the richness of character development that can be had when creating a movie. There was a subsequent TV film and TV series which were not successfull at all. This would be a good story to update and remake.

I would like to see either The Color Purple or Sparkle (which the re-make is already set to be released in 2008 or 2009 with Raven Symone playing Sparkle) remade with a modern twist. And who I'd like to see play those roles are as follows:
The Color Purple
Alfre Woodard as Celie
Ving Rhames as Mister
Angela Bassett as Shug (Avery)
Don Cheadle as Harpo
Halle Berry as Sofia
Anika Noni Rose as Nettie

I would like to see a good remake of How Green Was My Valley with either Ron Howard or Spielberg at the helm. Sean Connery would have a role in it for sure, with probably Brad Pitt, Leonardo di Caprio, and Meryl Streep.

The original Star Wars Trilogy, using modern special effects.
No idea who could play the lead roles though.

I think a remake of Midnight Cowboy would be good.
Johnny Depp would be great as Ratso
or maybe someone like Ryan Gosling as Joe Buck or Heath Leadger.
I'd love to see an updated version of that movie.

I would like to see a modern version of Random Harvest.
Colin Firth would play Ronald Colman's part and Kate Winslet would play Greer Garson's role.
