Some people suggest that we would have found a niche to evolve in anyways. Would something else have evolved into human-like creatures, not mammals? Would mammals have never gotten a good enough hold to evolve into humans?

In the "what if" world ANYTHING is possible so the answer is always, yes, possibly, and yes possibly.
"What if" is always good for a potential book or movie script but not much else.

When a species disappears from the fossil record, you do not see a pattern of a new species replacing the former species with a similar life form. The fossil record suggests the opposite. There are all sorts of life forms in Precambrian fossils that met a dead end - nothing remotely similar appears in later fossils or living organisms. This phenomenon shows up again in later mass extinctions, although there are a few exceptions.

It appears that from any given point forward, living species are analogous to a random assortment of building blocks that can be organized in variety of ways. If you lose one single block from the assortment, you cannot reorganize the blocks to make up for what was lost. So the niche occupied by the lost block is lost along with it. So who knows what would have happened?

I cannot believe that humans would have been able to evolve in their present form if dinosaurs had not become extinct. [at least the larger forms of dinosaurs.]

i say we would have evolved the same as we are now but it woud have took much longer, and to keep everything undercontrol we would have a jurassic park

well if we could train them to let us ride them we would not have to pay these high gas prices, or if we could eat them, one would last us the rest of our life. but they did die out, so don't worry about it.
