Aside from being considered by most to be a soothing "comfort food," chicken soup can also help clear the nasal passages of congestion and helps to inhibit white blood cells, which can cause inflammation, sore throats and phlegm.

Chicken soup also contains an amino acid called cysteine, which can aid the healing process by helping to clear mucous out of the lungs.

Hope that helped... I just read an article about that earlier today, coincidentally!

Not only what the other posters said, but a chicken soup made with many vegetables has a lot of minerals... literally BLASTS you with minerals from more vegetables than you could possibly consume, if she makes it with a lot of veggies (and even fishes them out, you don't have to eat them).

When you're sick, and making chicken soup, make it with a ton of veggies, including especially spinach. If you don't want to eat them, fish them out. This, with regular nasal flush and rest, will get you better faster and more thorougly than any medication. One sick day could make a world of difference if you do nothing but make and eat soup, flush and nap.

Surprisingly, it does help people with viral infections and colds. It seems to jog the immune system.
