we relate certain letter combinations with certain sounds
for example ou=ow about, trout, stout, lout,route,scout,etc
English is hard enough to learn as it is without straying from these patterns
as for -our that is pronounced like "oww-er" like 'flour' or "ure" like 'velour'
do you pronounce it like co-lure? colour doesn't fit in there(so its spelled color here)
I'm not sure about 'z'...how do other people pronounce it if not 'zee'?

Well, out is pronounced owt, bout is pronounced bowt, so about is pronounced abowt. We tend to pronounce the ou combination as ow. It also sounds like the u in cup (couple) and the oo in wood (would, could), but I don't know of any ou words that sound like oo as in boot. Unless you count coupon, which is also pronounced kyew-pon. But that is the only one that I know of.
As for color, Noah Webster changed the spelling of a lot of British words about 200 years ago, and they have remained that way ever since. (E.g. centre is center.) Z was pronounced zee in Britain for a while (about 200 years ago) and the Americans kept that pronunciation, whereas the British reverted back to the zed pronunciation a short time later.

because we want to, as all all labguages are constantly evolving there is no true right way to pronounce them, as what is right varies by the area in which it is spoken and 'right' is deemed therein by majority rule.
the guy before who spoke of South Park, is confused, in SP(and other comedy sources, Canadians pronounce about(meaning around, almost, or near. depending on context)as 'uh-boot', while Americans say 'ahb-out'
