For english words you can match up kanji (chinese character) that you like, and that have the same sound as your name.
For example my last name is Anderson. My chosen kanji is (if your computer can read Japanese)
安太尊。
That means peace & big respect.
(heian no an, futoru no ta/da and sonkei no son.
Andason = Anderson.
Maybe you can find some characters that you like also?

You can only write last names in Kanji is the name is Japanese (or Chinese since they are Chinese characters). So if you are asking how to write an English last name in Kanji, you are out of luck. And there's not much else to answer-if you know the Kanji for someone's last name, than write it. All Japanese learn how to write their name in Kanji (first and last) so if you are curious about that, just ask somebody.

Yes, Japanese are told by their parents which Kanji are used to write their names. 田中、長谷川、石田、高橋 Are examples of common family names.

Sometimes for fun, Japanese often assemble Kanji characters to match the sounds for friends foreign family names .

Smith = 酢見酢 スミス which is meaningless or even funny.
