Shooter: The best two shooters I've played have been Call of Duty 3 and Gears of War. The third best in my opinion is Battlefield 2: Modern Combat.
Sports: Tiger Woods 07 is gorgeous, NBA 2k7 isn't bad, and neither is Madden if you're into football. My favorite sports game though would have to be Fight Night Round 3. The graphics are beautiful, and it's one of those games that's easy to just jump into.
Racing: Project Gotham Racing 3 and Need For Speed (both Carbon and Underground) were both great games.
RPG: Oblivion is the king of role playing games, and it is one game that you can really immerse yourself in.
RTS: Lord of the Rings: Battle for middle earth II is the best one. This thing is awesome. So many battles, so many options.
Other: Viva Piñata is a hilarious game of farming, that looks like it's for kids, but in all reality it is a REALLY fun and intriguing game!

Well for first person shooters there is Gears of War which is an amazing game, for sports Madden NFL 07 is good, racing Need for Speed Carbon or Project Gotham Racing 3, role-playing would be Elder Scrolls 4 or if you want Japanese RPG Ive heard Enchanted Arms is pretty good, or wait for Blue Dragon sometime next year, also there are some good games on Xbox live arcade like Geometry Wars.
