I'm thinking about getting a Vantec Nexstar3 Mirror Finish External Hard Drive Enclosure, but i am slight confused on what harddrives it fits. It says it can fit any 3.5 HDD, so is that any HDD on the market? and could this Maxtor DiamondMax 11 500GB ATA-133 Hard Drive fit into it? If anyone could help me out and explain this too me that would be great.

No, It won't work. Although the drive would physically mount in there, that enclosure takes a drive with a SATA data cable. That drive uses an IDE cable (sometimes called parallel ATA).

IDE is a wide flat ribbon cable that is older (but still very common).
SATA (serial ATA) is a much smaller cable which is starting to replace IDE.

As long as it is a 3.5 inch wide HDD it should fit into this enclosure. Most desktop HDDs are 3.5 inches, laptops take a 2.5 inch. The next question that needs to be answered is, does the enclosure accept SATA HDDs or IDE (PATA)? If you get the drive get it in the SATA version if that is what the enclosure takes.

It's specifically for USB hard-drives. The hard drive you have won't fit into it, as it is not a USB drive.
