When I think about playing acoustic songs, the first artist that come to mind are:
The Eagles (Well structured, yet easy)
Eric's Trip (Their sappy low fi sounds great even in their acoustic songs)
REM (Whether its one of their acoustic songs or electric, they always seem to sound good acoustically
Led Zep (I don't think I have to describe Zepplin but Bron-Y-Aur Stomp is great fun)
Great Big Sea (Nothing like East Coast music)
Nirvana (One of my favorite bands)
Wingy Thingies (someone made me a copy and I can't find anything by them anywhere, so if anybody knows anything...)
CCR ("America's Greatest Singles Band")
John Cougar Mellencamp (Scarecrow alone is great)
Fleetwood Mac, Nizlopi...
I know these may not be exactly the sound you're looking for, but for me, I grew up liking pop and hated everything else. I started liking the Eagles and found out that they did county-rock in their early years and started giving that a chance. That led me to acoustic metal to metal to punk to Lofi to realizing that a genre doesn't make the song its the song. Any song can be done in any genre with a little creativity.
There's other individual songs and I'm sure that I'm forgetting a lot but its early here. (-:
