I would want to be a Australian Cattle Dog, a Lab with lots of room to run or especially a Pit Bull that was treated correctly from the litter. (not trained to fight, but rather to only protect the household and family.) Pits have been some of the most gentle dogs I have ever seen!
BUT they are constantly aware of who belongs and more importantly who doesn't

I would only come back as a dog if I can choose my master.
And I would be a handsome pure breed German Sheppard.

A Maltese. That way I would be a lap dog. They are so irresistably cute. Their owners always take them everywhere and hold them in their lap because they are so tiny and fluffy.
I would want to be held and loved all the time.
I would feel safe.
