For music, can't beat Pro Tools. A free eight-track version is available at digidesign.com, and has all the features of the full version (which has, if I remember correctly, 128 tracks).
For video, depends on your setup and your budget. On a standard home computer, I'd recommend Adobe Premiere; on a standard computer that's got a good-sized hard drive and is to be used exclusively for this, I'd recommend Media 100. The next step after that is Avid, which I haven't used, but is going to take more than a standard setup to operate. No matter what you decide on, I'd also highly recommend Adobe Aftereffects as well for graphics.
That said, Premiere is good for editing smaller bits of video, editing for the web, and small-scale stuff; anything big and/or professional, Media 100. Again, major price difference...Premiere is for really anyone, Media 100 is professional and is priced accordingly--usually purchased by studios and/or editing houses. Both are fairly user-friendly.

my husband says that he uses windows movie maker that he really likes, he says adobe premier pro is okay, but it is somewhat limited compared to others. For PC adobe premier and for MAC final cut pro he suggests. He also says that you can probably do a general search on yahoo probably for music editing software.
The whole of the movie Corpse Bride was edited using final cut pro. Just to give you an idea.
