1. When you feel a cough or sneeze coming on, COVER YOUR MOUTH. It's very difficult to excuse yourself after you've phlegmed the entire front row in class.
2. REMOVE HAND FROM MOUTH, or not even your classmates will be able to tell whether you're saying "I'm sorry" or "excuse me."
3. "Please excuse me" is more appropriate in the setting described in your question. "I'm sorry" carries with it a more repentant connotation. (Exception: If you HAVE indeed sprayed the entire front row, "I'm sorry" moves to the top of the list as the most appropriate thing to say, for now repentance has become mandatory. If your teacher was sitting in the front row during your brief expectoration of fluid projectiles, consider running out of the classroom, ripping your notes and distributing same as airborne confettii. Take the rest of the day off and nurse that cold!
4. Move on as if nothing has happened. Making a graceful transition from sneeze to speech is the mark of a great orator, which is definitely not worth sneezing at! :)

If you are not well and know ahead of a presentation there could be coughing or sneezing- acknowledge it at the beginning and say something like "bear with me if I have a coughing attach- I have been fighting through it the week". If it happens more then a few times in your presentation- acknowledge it again- apologize. If it continues- you will need to end your presentation until another time.

The polite thing to do if you are giving a presentation and you sneeze or cough or make any other bodily sounds say excuse me. You can say "sorry" but excuse me is more professional.

When it's you who sneezes you say either "excuse me" or "sorry". If someone else sneezes you can say "bless you" but these days (especially in a school) you have to be very careful about saying "God bless you". Unfortunately.
If you cough then again either one will work but you don't usually say bless you to someone else who has coughed.

You can say "sorry" or "excuse me" either one works. It shouldn't be too big a deal, that sort of thing happens.
