In contradiction to what a couple of people have answered a cockroach will not die like some mammal with its head cut off. Obviously it wont be able to leave a totally normal life and thats why it will starve to death though I dont know if that would be a couple of days, in principle it could be several months - all arthropods, insects included dont use huge amounts of energy and some can go long periods without food if they're not especially active.

The REASON they can live with their head cut off is because a lot of their neurological system is based in a smaller ganglion (smaller than its 'brain' that is) which is found in the lower thorax.

I believe it is 2 days and then it's body starves to death.

up to a year, is what i've always heard. sorta fits in with how apparently they can survive a nuclear fallout - i guess they're just not crazy about dying.
