My response is just a little different....
Build your rocket and get enough engines to launch it six times.
Arrange to get the temperature, wind speed, wind direction, relative humidity, and dew point from a local source like an airport or radio station.
get a protractor and two rulers, a bolt and wing nut....drill a hole in the protractor at the point below 90degrees at the cross hairs just above the straight side....drill a hole through both rulers at the the one inch measure.....insert the bolt..what you will have looks like a protractor with two legs.....you will use this to measure how high your rocket goes each time. Measure the exact distance from your rocket launch pad to the spot you launch or observe from. Hold one ruler horizonal with respect to the ground and move the other to sight at the highest point the rocket flys to....record the angle....now...calculate the height of the triangle...
Build a spread sheet or chart to list and graph the height of each launch....bingo...you have a science project that ties together physics, math and metrology.
Write a report that tells what you did, how you recorded the information and the results.
Ask your math teacher for help with calculating the height...a calculator will be a big help...
Ask your english teacher for help with the format of your technical paper.....
This is the kind of thing that Scientists do......same basic principles.....Good luck...

You can make rockets out of Mentos and big plastic soda bottles and explain how they work. See the link on how to build one.

if it can be held outside, get a rocket with a clear payload and try packing it so a raw egg will withstand the speed and pressure (besides it fun trying different methods, sometimes the eggs cook, sometimes they explode in the payload).
