Diamonds only are traditional for engagement rings. Lately I have been seeing Rubies or Saphires also in engagement ring settings. I think the large diamond between two smaller Saphires look nice. Any thoughts?

your engagement ring is entirely a personal choice.
I've seen many, and actually the diamond is only very recently become the norm. Prior to 1950, there were many styles of rings and stones. The diamond became popular in the 50's/60's.
Engagement rings were also not very common - only the wedding band.

I would do the opposite. Set the sapphire between two smaller diamonds would look nicer. That way the color of the sapphire would be given center stage. Sapphires generally have a good coloration, while diamonds are more subtle.

I think it is a beautiful combination. When i think of diamonds all by itself I find it kind of boring and old because it seems everyone wears the same thing, so yes, if it is given to you with love and you love it wear it with pride.
