I guess the fairy tale authors try to imply that you can't wish for that when you really can't. Or it won't get anywhere if you wish for more wishes. Probably wisdom, but it isn't what an author's trying to get across.
Good point, though. There should be a fairy tale when someone does wish that.

Because there is a limited time in fairy tales and if they wished for more wishes, than it would be a very long fairy tale.

if they wished for more wishes then thhat ruin the importance of the one wish (which is meant to show us about their personality so the wish shows us what they vaue the most)
