They no longer had to chase and follow animals and their migration routes for food. They could settle in one place and establish villages. The supply of food was more reliable so people lived longer, were healthier, more children survived to adulthood. They began to have more leisure time so artistic pursuits and sports became more important. Farming led to a more sedentary life style and a more relaxed way of life.

Farming did two basic things in the development of man. First, it allowed them to develop from nomadic groups looking for food into vast societies that could grow enough food for everyone, and fewer people were required to do it. This allowed for a specialization of labor (this should have been covered), or a society where people have different jobs that contribute to the society. Second, it allowed for a system of writing to develop. People had to find a way of detailing what was brought in and taken out, and verbal histories weren't very well suited for that. Once this system of writing was accomplished, peoples began writing down their histories and events that happened to them (such as the cave paintings in France).

Believe it or not, there's some really good information on this in a book called Eat Right 4 Your Type. It's a book about how the four basic blood types came to be, and the history was really interesting. I'll bet your public library has a copy but if not, do a google search on HISTORY OF BLOOD TYPES.
