Ok I have to kinda disagree with everyone else aboutthe jewelry thing. If you are positive you know what styles she likes then go for it. But if you're like my darling husband and aren't totally paying attention to that kind of stuff then don't. I have so much jewelry that's all nice but not my style and it just sits there. The best things my husband ever gave me were a day at the spa (that was fabulous! and got him major brownie points both when he gave me the certificate and again after I'd gone) and I love tattoos so one year he had one designed for me and got me a shirt from the tattoo parlor and when I took it out of the box the certificate fell out. That one's still my favorite. (funny thing with it though...he was being so sneaky while getting it designed and had so many people in on it that I thought he was cheating or I was going nuts! I knew everyone was hiding something and they'd always get these weird grins on their faces that I was getting really self conscious! I almost broke up with him! lol)
Try and think of what she likes the best and get something associated with that.

Jewelry never goes wrong! Make sure u POSITIVELY know her size - Rings. Necklaces and bracelets are always good, no size needed. But tailor to her taste and liking. Or maybe something u are aware that she has been eyeballing, but wont buy herself - Spoil her a bit - lets her know u acknowledge her wants too.Take her to get her nails done. Or try getting her a girt certificate to a massage parlor, beauty salon, or a tanning session maybe. Make her feel pampered, she prolly needs it after stressing over what to get u. Think about it, the options are endless....

I would two things if I were in your situation. First do something that says "I really care for you." Donate money to a charitable cause that she is passionate about, or name a star after her in the national star registry. Then purchase another small gift, one she can open on Christmas day. I recommend just about anything on www.redenvelope.com. For gourmet sweets go to www.williams-sonoma.com

Give her something special in the jewelry department. How about one of the three diamond rings or necklace? They represent past, present, and future.

jewerly always works. or try something original, something no one else has ever done before, like a picture on a plate or something. not to sound too cliche, but it's the thought that counts.

Talk to her friends, sisters, mom. Think about what she loves to do. Investigate spas in your area, find a really smart friend of hers to help you plan a "perfect day".
