Urban planning is really a general phrase that has to do with several subcategories. Anything related to managing a "city" or an urban area is urban planning. This includes land-use, transportation, city government structure, budgets, etc. There are some great books out there on urban planning, but for a good overview I would recommend "Community Planning: An Introduction to the Comprehensive Plan," by Eric Damian Kelly and Barbara Parker.

Urban Planning is the design and provision of retail, commercial, residential and industrial areas and the essential services required to support those areas within an Urban Context. Its basically a modern name for Town Planning.
