My harp has 30 strings but you can get smaller harps and much larger ones. Concert harps, which have pedals for changing the music keys typically have 34, 40 or 47 strings.
Folk harps (like mine) have 30 or 34 strings and have levers for changing the key.
You can also get small harps that are placed on the knee to be played and can have as little as 8 strings.
The 'C' strings are red, the 'F' strings are black (or purple depending on which make you go for and the other strings are a natural cream colour. The strings from lower 'e' down are made of metal.

It varies, but to be truly useful and playable, about the minimum number of strings you can have is around 22.

A harp with 36 strings has a full five octave range (every 7 strings is an octave on the harp) and is considered to be a professional instrument.

A celtic harp has 46 strings as far as I know. I think a concert harp has 84.

as long as the harp strings have metal content in them, it'll work. But it won't sound like a sitar. Sitars have extra strings that vibrate to give them their sound.
