The only one of those I've been to is Crete and I would highly recommend it! There are some truly awesome sights- and we were at a really nice beach...
I know we were in Heraklion. I'm sorry to not remember more details (like where) but there are some really neat old villages to tour, old Minoan palace ruins at Knossus and nice beaches... I loved it!

Okay im speaking from experience here:
This summer i spent almost 2 months in Rhodes and another 2 weeks in Kefalonia for my aunt's wedding. And have heard a lot from other people about the other islands both from friends and actual greek people
From what i can tell Rhodes is the place where you could spend the most time doing things other than just hanging out on the beach. It has a great history with lots of ancient artifacts. Theres the medivel castles to visit and a ton of shopping to do. I had a great time and there was always something to do. It has some surprising things there such as a huge waterpark and a huge casino. It also has a great night life in Faliraki and "bar st." and is a huge tourist island. Its very close to Crete and Santorini if you would like to visit those too while your there. The beaches there are GORGEOUS. Pure blue and you can see down to the very bottom. I feel its the best balance of fun and relaxation mixed with history and architecture
I would suggest that you do not go visit Kefalonia. Although it is very beautiful and also has gorgeous beaches it is mostly a small town island and not many people go there to visit as tourists. I know when we were there people gave us looks because they had never seen us before. It is not that populated of an island but if your looking for authentic greek living on an island it is a good choice.
Crete and Corfu are also good for historical trips but i never heard much of them as far as beaches and leasurely time goes.
As far as santorini its hugely touristic and is more like visiting a caribean island in that its lost a lot of the greek feel as it has been turned more tourist friendly

I have been to Rhodes, Crete & Corfu.
Crete being the largest of the islands you mention, has lots of tourism, but thank the Greek Gods, also a large and authentic inland and smaller coastal destinations where prices are still moderate. Try Agios Nicolaos, Elounda and Sissi area all east of Heraklion.
Rhodes is smaller; you can easily make a coastal tour of the island in 1 day. Very tourist orientated and expensive island.
Corfu is small and the greenest Greek island. It is a pleasant destination still reasonably priced and just sufficiently sized for a 1 week stay.
Why not concider Mykonos.
Have a look at my Greek pictures on joined link..

I have been to all and all have been great for me, but I would recomend Corfu. Corfu has the richest historical background and the most interesting nightlife (Privilege, King Size, Dirty Nellie's), sights and beaches (I would recoment Glyfada). It's a perfect blend of everything one would need for a perfect holiday :)
And it's not the thypical greek island. The Venecians ruled the island for a long time, so it has quite a bit of that Italian mediteranean touch.
Also, the Austrian Princess Sisi had a summer residence on Corfu and she spent a considerable ammount of time there.
In addition to all that, the people on Corfu are way nicer (and varied, cause of the many tourists, which makes it a great place to meet people from all over the World) than on any other Greek island.
Hope this hepls answer your question,

Each one of these islands has something to offer.
I find Santorini a brief-visit resort only; it has little else.
Kefallonia is underrated but it has been less developed than the others you mention.
Rhodos is a big island, with some ancient history; and it is very popular with tourists because of Medieval castles and great hotels.
Crete has a wonderful history, miles and miles of beaches, an remarkable ancient sites.
Corfu (Korkyra) is another decently developed and attractive resort island but little else.
If my money and vacation were on the line, I'd choose Rhodes or Crete and take a ferry to a few other islands as well while I was there.
I envy your chance.

Corfu is a wonderful green island,i would recommend to stay at Dassia area,it is 7km from the main town of the island called also Chora(country)from locals. The island has a castle and more great places to go sightseeing. You can combine peacful vacation their are plenty of crowded beaches but also many desserted spots.Nightlife varies because the city of Corfu has an open cinema, cafe, bars, restaurants, taverns(traditional restaurants)and nightclubs. You can find at reasonable prices to rent a car or scooter to explore the island. From the city to Lefkimi the Southest place of the island is 70km,so you can combine a 2 day excursion and the rest of your vacation to lie on the beach.Glyfada is another beach where usually younger people gather at caffes on the beach or play rackets or beach-volley.The Northest part can be chilly at night in somedays a blancket is usefull.

All of them are worth visiting really with many unique features but i would recommend Santorini for the most spectacular view of the Volcano(the one that gave this island it's shape and it is known in the history as the the lost Atlantis as some part of the island sank after the explosion) and the amazing sunset well known around the world. Unique beauty and the most romantic destination for me. You could find a good hotel not too expensive in the capital of the island called Thira. Trust me this island will still your heart!

I spent my honeymoon in Rhodes, although we went some of the other islands on a cruise ship. The walled city of Rhodes is very interesting and lots of nightlife nearby. Lots of people from England go there for a holiday. Crete and Corfu have better beaches though. Have fun where ever you go!
