A lot about some things, nothing about other things - for both parts of the question. :-)

Your question leaves out the purpose of your writing but assuming you wish to write about things you do know about you would first have to narrow your interests. You could order the subjects you feel most knowledgeable about. Then search for more information just as a great author like David McCullough researches when writing about George Washington in 1776.
Order what you want to say and simply say it with detail and facts.
You sound like you may be of a philosophical nature and like to read and write open-ended pieces of work. That's great! You can present a proposition or idea and then give what you consider the best "say" to what you "know" or are interested. So what if not every one agrees? You may have sparked thought if that is your purpose. After all, Columbus had to convince someone to give him a ship and crew when the world was considered flat but he made it! Go for it!
