Have you read this children's book? Beautiful illustrations--Mouse building a rocket for mooncheese!?

Full of illustrations of mice with creepy, huge, saucer eyes, involving a mouse and his friends/family building a rocket ship and going to the moon because of the hearsay moon-cheese. Full page illustrations, young reading level... I read it in elementary school many, many times, but I can't remember the name!
