Why would you want to?
Your Insurance policy requires you notify them of any modifications to the car, so you have to notify them of this. They will probably increase your premiums because the chances of more serious injury occuring during an accident will go up.
You may find it also affects the roadworthyness / legality of the car as well.
I would read the fine print in your insurance contract before I did this, and also check out what happens if you "forgot" to tell them.
I suspect they will have a clause in it which absolves them from liability if you had removed the belts and they weren't notified.
Of course, there is actually a better reason not to remove them, but I'm sure you know what that reason is.
