this is attributed to an amine compound, ( a base ) WHY DOES LEMON JUICE CUT THE FISHY SMELL? a, b, c, d, OR e
a. This is a fallacy with no foundation in science.
b. An acid and a base form a salt and that reduces the smell.
c. Lemon is a natural cleaning solvent so the lemon acts as a cleaner.
d. An acid and a base form water and water has odor.
e. The smell of lemon masks the fishy smell because lemon has a stronger smell.

I'd have to say C. The acid in the lemon slightly cooks the fish.

lemon juice will actually start to cook the fish, so it will mask the fishy smell.

f. the smell of fish is not that strong if it is fresh, it goes well with fish because of its texture not its smell. the lemon brings out the sutler flavour of fish. you would not squeeze a lemon over beef for example. get yourself a different fish supplier.
