In one of my favorite books, turned into a movie, in the movie when the first twin has died, Oliver, and the undertaker's horse drawn carriage is going down the street, in the people gathered on the street some women step out as the carriage passes and pitch buckets of water into the lane. Why do they do this, some religious significance?

It's an ancient superstition. When someone leaves the house for travel, for instance, the ones that are left behind throw some water, for example a cup of water, outside the house in the direction of the person. It's intended to bring good luck and a smooth journey. That all the things will run smoothly like water flows.

I haven't seen the movie version, but I just wanted to thank the person who replied to your post for explaining your question. Angela's Ashes is my all-time favorite book. I'm glad the surviving brothers, Frank, Malachy Jr, Michael and Alfie are still alive to this day.
