Humans have always felt the need to be entertained by bloodshed. It's nothing new. The Colleseum in Rome what built many centuries ago. It's almost inate for most humans to find these things entertaining.
I think as a race we've noticed this method of entertainment to be a bit uncivilized. Exciting to see, but yet still, uncivilized nontheless.
Through various technological advances throughout the years we can see the true gruesomeness of human evolution. And we can learn from our past in ways never before imaginable.
Maybe that's why they are so violent. Or...
Maybe he does it simply cause he can.

I believe his aim is to show reality versus fantasy. I have always enjoyed his movies. So many are based on real events.
So, the first sentence is my answer. Violence is a part of our world throughout history.

To sell tickets...same reason video game creators put so much violence in video games, to sell more copies...
Real violence disgusts many people...Hollywood violence entertains them...somewhat like the Romans of ancient times...

To get higher ratings from the action crowd, because he is known for many of his action movies, like "Braveheart", and many other high notch films that helped his stardom. Thats my opinion, but sometimes he goes and stars in "Want women want." and turn up the charm, he's an actor, so he be's want they want him to be.
