This song came out in probably the early '60's, it was all instumental, no words, and considered mainstream or pop at the time, and I think the band name was two words and one of the words was symphony or orchestra. My mom loves the song and I want to burn it for her,but cannot remember the name of the band or song.

Electric Light Orchestra (also known as ELO) was big in the 1970's. They did a few all-instrumental songs -- I think Fire On High was mostly, if not all, instrumental.
