As water freezes in the ice cube tray, it crystallizes on the outside of the cube first. As we all know, water expands as it crystallizes into ice. So, as the water crystallized on the outside of the cube, it expands and pushes the unfrozen water inward. The unfrozen water cannot go down or to any side because of the tray structure, it can only go up as it crystallizes. It slowly pushes up to a sort of point as the freezing process progresses.

Did you mean that it grows on it's sides and there is a cave in the middle?Maybe you have an ice cube-maker that attracts water.I mean like some metal and not plastic.
