Most valuable - probably something like a teacher, or a doctor. Teachers play a large part in how are children are assimilated into society. Doctors - well, you know - they can keep you alive!

Least valuable - Professional athletes. Look, I'm a huge football fan - but I've got to say, how do these guys contribute to the betterment of society as a whole - especially given our current social environment in this country? Not a lot. Some of them more than others, but for the most part, not a lot.

I think the most valuable profession to any society would be a medical doctor and the least valuable profession would be a celebrity.

I see you're getting lots of good answers.
It depends on what you personally value most, I suppose.
I read where the most highly regarded profession is Fire Fighting.

Teaching is the noblest, yet least valued profession.
An M.D. is the highest attainable degree, so it's probably the most highly regarded(and paid) profession.

I think the least valuable profession is the "Professional Student."
Know a guy who has a B.S. in Biology(a five yr.degree), and a Masters in Education. He works @ CompUSA, and is now wondering if he should persue a Ph.D....I call that an educated idiot!

In my opinion.....

most valuable - a tie between doctors and our soldiers in the armed forces

least valuable - counselors who encourage our young girls to get abortions

Kindness. It is the business we should all be in. There are many that serve mankind well, and that is at the heart of your question. So, perhaps, teachers, doctors, nurses, etc. But consider volunteer workers who do anything and everything without pay to help others. I think volunteer workers are the most important, theirs is the profession of kindness.

I guess a bank robber would be least valuable.

I suppose a research scientist could be the most valuable. Especially when they discover a cure for Cancer, or Aids, or any other tragic disease.

Most: Gargbage men - Just think if no one pick up the garbage we'd be all sitting in our own filth!
Least: Cashiers - Self Checkout should replace you all!
