I started going out with my girlfriend over 3 years ago, and she knew absolutely nothing about sports. I love sports, and over time she began watching with me. She has learned a lot by watching with me and asking questions, and this has actually meant a lot to me. Not only can I share knowledge about something that I love with her, but she also expresses interest and really wants to learn. The easiest way to learn would probably be to watch with him and have him explain the basic rules to you. That way would definitely be easiest for you, and (usually) will mean the most to him as well.
I realize that this does not directly answer your question. Here are a few sites where you can sort of learn some basic rules:
baseball:

American football:

The best way to learn is to have him take you to the games and explain what is going on. He will enjoy that you want to learn the games that mean so much to him. There is also a lot of info on the official web page for each sport.
NFL – American Football League: http://www.nfl.com/fans/rules
NHL – National Hockey League: http://www.nhl.com/rules/index.html
MLB – Major League Baseball: http://www.mlb.com/NASApp/mlb/mlb/official_info/official_rules/foreword.jsp
I am not sure about the other two sports, but I know that most NFL teams hold a one day seminar around the start of each game (August/September) season for Women only, and it is usually called NFL101 for woman. The 101 is in reference to college course that teach the very basic information regarding the given subject.

Its easy to learn first you go to a wonderfully scenic place like Iraq and find a way to get busted by an American Soldier. Then you must convince them you have valuable information such as where Osama Bin Laden is located. Then the fun begins.

baseball for dummies
hockey for dummies
football for dummies
Yeah, you can watch espn, but they can be very technical with sports terms when describing any particular team/game. Plus, you have to wait for something to be in season for sportscenter to give wide coverage to it.
I commend you for wanting to develop a basic understanding. A guy who is intently watching a sporting event on tv really does not like to be questioned...."how do they score...why is it only 3 points for that...why is that player standing out there....etc."
