After pressing start in this game, how can I fast forward or by-pass all the opening credits to actually starrt playing, as they take a long time to get past?

on the x-box version you can only do that if you have saved a level.

Press the analog stick down like it was a button, left or right I'm not sure. But one of the previous answers may be right that you can't fast forward a scene unless you've already seen it.
